Macaroni Cheese

Ingredients

  • 200g Président Double Brie, diced
  • 300g grated cheddar cheese
  • Or try 150g grated cheddar cheese and 150g grated Président Comté cheese for a more enhanced flavour
  • 3 tablespoons Président salted butter
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon nutmeg
  • 500ml of full cream milk
  • 100g of chunky fresh breadcrumbs
  • 250g of Elbow or Macaroni Pasta
  • A splash of thickened cream

 

Steps

 

Step 1

Mix all cheeses together and set aside 100g for topping. Melt 2 tablespoons butter in large saucepan over medium heat. Add flour and stir until mixture turns golden brown, about 4 minutes. Add the nutmeg and gradually whisk in milk. Simmer until thickened and smooth, stirring often, about 4 minutes. Finally add the cream and remove from the heat. Add remaining cheese and stir until melted and smooth.

 

Step 2

Melt 1 tablespoon butter in a large frypan over medium-high heat. Add breadcrumbs and stir until golden, about 2 minutes. Transfer to a plate to cool.

 

Step 3

Preheat oven to 190°C.

Cook the pasta in boiling salted water until al dente. Drain the pasta and transfer to a large mixing bowl. Pour the cheese sauce over the pasta and combine. Pour the mixture into a baking dish and top with the remaining 100 grams of cheese. Cover with baking paper and foil. Bake the Brie Mac and Cheese for 15 minutes. Remove the baking paper and foil. Sprinkle the breadcrumbs over the now hot Brie Mac and cheese and bake until top starts to turn golden, about 15- 20 minutes.
