In 1958, Comté became one of the first cheeses to receive the AOC (Appellation D’Origine Contrôlée) certification. This means that like Champagne, which must be produced in the Champagne region, the cheese must be made in the Franche-Comté region to be legally called Comté.
The strict production process follows the artisan traditions founded over 1,000 years ago, which preserves the local qualities of Comté and is responsible for the remarkable depth of flavour.
