For more than ten centuries, farmers, fruitières and affineurs in the Franche-Comté region of eastern France have lovingly crafted a unique and delicious cheese.
There are several maturing cellars in the region where Comté is ripened for a minimum of 4 months to 18 or 24 months. Over time the Comté wheel develops its unique smooth texture, rich colour and delicious range of flavours.
Considered one of the finest cheeses in the world, a wedge of Comté reveals a pale yellow interior and a texture that can vary from silky, flabby to crystalline.
Comté is characterised for its surprising aromatic richness and nutty, creamy, fruity, peppery and toasty notes.
